Ingredients

  • Bread:
  • 1 Slightly rounded tsp espresso powder
  • 1 Tb boiling water
  • 3/4 cup from age fraise or sour cream or cream cheese
  • 1/2 cup cornmeal
  • 1 stick soft butter
  • 1 cup sugar
  • 3 eggs
  • 1 2/3 cups flour
  • Baking powder/soda as appropriate (to substitute for self rising flour.)
  • 1/2 tsp baking soda
  • 1 tsp vanilla
  • 2 Tb cocoa powder
  • Espresso icing:
  • 2/3 cup conf sugar
  • 1 slightly rounded tsp espresso powder
  • Scant 1 Tb cream cheese (from bread cheese)

Preparation

Step 1

Bread:
Put espresso powder in boiling water to dissolve cool.remove scant Tb from cheese for icing. Put remaining cheese, cornmeal, butter,sugar, eggs, flour baking powder & sodas, in bowl, beat until combined. Put 1/2 mixture in second bowl., add vanilla, mix. To first bowl add cocoa powder & espresso water, mix. Spoon batters into baking pans & swirl w/skewer. Bake at 350 degrees for 35-40 min.
Icing:
Sift conf sugar into bowl w/ espresso powder add reserved cheese. Add enough cold water to make spreadable. Cool bread in pan, remove & ice.
