Ingredients

  • Frosting:
  • 2 1/2 flaked coconut divided
  • 1 pkg white cake mix
  • 1 can coconut milk 14 oz divided
  • Egg whites&/ or oil as on the pkg.
  • 1/2 cup softened butter
  • 2 1/2 cups sugar
  • 3-5 Tb coconut milk
  • 1 tsp vanilla

Preparation

Step 1

Whisk together cake mix & 1/2 cup coconut flakes, add coconut milk instead of water, egg whites & oil. Mix on low for 30 sec. & med for 2 min.. Put in cupcake maker 1 1/2 tb batter in ea cup. Bake & cool.
Spread 2 cups of coconut on baking sheet. Bake at 350 degrees for 5 min, cool.
Frosting:
Beat butter & sugar for 1 min. Add milk & vanilla beat for another min. Until light & fluffy. Frost cupcakes & sprinkle w/ toasted coconut.
