Ingredients

  • Crust:
  • 6 lg. Eggs
  • 1 1/2 cups sugar
  • 4-8 oz. pig cream cheese
  • 1 cup sour cream
  • 1 cup heavy cream
  • 2 tbs. lemon juice
  • 1 tbs. vanilla
  • 2 heaping Tbs. flour
  • 1 1/2 cup crushed vanilla wafers
  • 6 Tbs melted butter
  • 1/2 cup sugar

Preparation

Step 1

Preheated oven to 425°F.
Add eggs, sugar, cream cheese, sour cream, heavy cream, lemon juice, vanilla and flour to mixer. Beat on low to low-med thoroughly, until completely smooth. While cake mixture is beating, make crust. Mix crust ingredients together in small bowl. Pour into 9" springform pan, pressing into place with fingers or back of spoon. Chill in refrigerator for 15 min. Pour batter into pan over the back of a spoon so it doesn't disturb crust. Let rest for. 5-10 min. Bake in 425°F oven for 15 min. Turn oven down to 275°F and bake for 1 hour. Turn off oven. Do not open oven for 2 hours. Refrigerate.
