Ingredients
- 3 tablespoons unsalted butter
- 2 cups finely chopped onion
- 1 bell pepper finely chopped
- 1 celery rib finely chopped
- 1 teaspoon dried thyme crumbled
- 2 pounds ground beef
- 1/2 cup rolled oats
- 2/3 cup ketchup
- 2 eggs beaten
- 2 teaspoons salt
- 1 1/2 teaspoon black pepper
- 4 slices bacon halved crosswise

DIRECTIONS:
In a skillet melt butter over medium heat. Add onion, bell pepper, celery and thyme. Cover and cook 10 minutes; stirring often. Remove from heat and cool.
Heat oven to 350 degrees F. In a large bowl combine ground beef, onion mixture, oats, 1/3 cup of the ketchup, egg, salt and pepper. Mix thoroughly.
Spoon mixture in to a large shallow baking dish. Shape it in to a flat loaf. Spread remaining ketchup over loaf. Arrange bacon pieces on top; overlapping if necessary.
Bake about 1 1/4 hours or until completely cooked threw. Let stand 10 minutes before slicing.
