Ingredients

    tablespoons unsalted butter

  • 2

    cups finely chopped onion

  • 1

    bell pepper finely chopped

  • 1

    celery rib finely chopped

  • 1

    teaspoon dried thyme crumbled

  • 2

    pounds ground beef

  • 1/2

    cup rolled oats

  • 2/3

    cup ketchup

  • 2

    eggs beaten

  • 2

    teaspoons salt

  • 1 1/2

    teaspoon black pepper

  • 4

    slices bacon halved crosswise

Directions

DIRECTIONS: In a skillet melt butter over medium heat. Add onion, bell pepper, celery and thyme. Cover and cook 10 minutes; stirring often. Remove from heat and cool. Heat oven to 350 degrees F. In a large bowl combine ground beef, onion mixture, oats, 1/3 cup of the ketchup, egg, salt and pepper. Mix thoroughly. Spoon mixture in to a large shallow baking dish. Shape it in to a flat loaf. Spread remaining ketchup over loaf. Arrange bacon pieces on top; overlapping if necessary. Bake about 1 1/4 hours or until completely cooked threw. Let stand 10 minutes before slicing.
