Ingredients

  • Any 1 Jar of your favorite pasta sauce

  • 2

    boxes of lasagna noodles

  • 2

    lbs. ricotta cheese

  • 2

    small boxes of frozen chopped spinach

  • 1

    egg

  • salt (garlic salt if you prefer)

  • pepper

  • basil OR parsley optional

  • 1

    bag of shredded mozzarella or Italian blend

  • Romano OR Parmisan cheese (grated)

Directions

Boil noodles as directed on box. Drain, rinse and cool.( You might want to separate them because they stick together as the dry and cool. Absorb moisture from ricotta by blotting it with paper towels. In bowl mix ricotta cheese, egg,salt,pepper, basil and or parsley and a few shakes of romano/parm cheese. while mixing cheese, microwave to thaw spinach and squeeze completely all moisture out Lay out noodles and start from one end by spreading cheese mixture, ALMOST to other end. scatter some spinach on top. Start at cheese end and roll. Put a little sauce on bottom of Lasagna pan and start lining rolls on top, when finished, cover rolls with sauce, grated cheese,and shredded cheese. Cover with foil (non-stick) Bake 30-45 min. at 350
