Ingredients

  • 1 cup low fat sour cream (or plain low fat yogurt)
  • 1 egg + 1 egg white
  • 1 (14-15 oz) can whole corn (drained)
  • 1 (14-15 oz) can creamed corn
  • 1 (9 oz) box corn muffin mix
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp sugar substitute OR 1 tsp sugar (more or less to taste)
  • 1/4 cup parmesan cheese

Preparation

Step 1

Preheat oven to 375 degrees and spray large casserole dish with non-stick cooking spray. Set aside.
Mix sour cream and eggs well in large bowl.
Stir in creamed corn, regular corn, corn bread mix, and seasonings. Stir until everything is well combined.
Pour mixture into prepared baking dish. Sprinkle parmesan cheese over the top of the casserole.
Bake for 50-60 minutes, or until crust forms and parmesan cheese is golden brown.
