Ingredients
- Crust:
- 2 cups flour
- 1 cup conf sugar
- 1 tsp salt
- 16 Tb softened butter
- Filling:
- 6 eggs
- 1 cup fresh lemon juice (4-6 lemons)
- 3 Tb lemon zest
- 6 Tb flour
- 2 big pinches salt

Preparation
Step 1
Prepare 1 18x18 jelly roll pan or 2 9x9 pans w/ butter & flour
Crust:
Sift flour sugar & salt into a bowl. Add butter & mix w/ fork then w/ fingertips. Pat crust into pan & bake at 350 degrees for 15 min.
Filling:
Beat eggs till frothy. Slowly add sugar until just combined. Beat lemon juice & zest until well combined. Sift flour & salt into filling mix. Mix gently until incorporated. Pour filling over crust. Bake at 350 degrees for 15 min. Cool in pan for 1 hour on rack. Cut into bars
