Ingredients

  • 32 cups tomato quartered -- skinned
  • 1 peck hot peppers -- minced
  • 20 cups sweet pepper -- chopped
  • 7 1/2 cups onions -- chopped
  • 4 heads garlic -- minced
  • 7 1/2 cups vinegar
  • 5 tablespoons salt
  • 54 ounces tomato paste
  • tarragon
  • basil
  • oregano
  • 5 tablespoons Worcestershire sauce

Preparation

Step 1

*In a large sauce-pot combine 1/2 tomatoes, hot and sweet peppers, onions,
garlic, vinegar, salt, fresh tarragon, basil, and oregano

*Bring to a boil, simmer for 20 minutes

*Strain tomato mixture, set a side

*The tomato mixture will form juice, extract juice as it forms

*In Large sauce-pot combine juice, tomato paste, and worcetershire sauce

*Cook down about 2 hours or till thick

*In large sauce-pot add all ingredients, heat thoroughly

Pour into hot jars

*Process 15 minutes
