Chocolate Chip Date Cake

Ingredients

• Date mixture:
• 1 3/4 cups boiling water
• 1 1/2 cups dates
• 1 1/4 tsp baking soda
• Filling:
• 1/2 cup butter
• 1 1/4 cup sugar
• 2 eggs
• 1 tsp vanilla
• 2 cups flour
• 1 tsp baking soda
• 1/2 tsp salt
• Top:
• 1 1/2 cups of chocolate chips
• 2/3 cup sugar

Preparation

Step 1

1. Boil dates, baking soda and 1 3/4 cups boiling water. Set aside (keeping water, do not drain)
2. Combine butter and sugar
3. Add eggs and vanilla to butter and sugar mixture. Beat well
4. Add flour, baking soda, salt and alternate with date and water mixture. Beat well with each addition
5. Pour into greased 9x13 pan
6. Sprinkle with 1 1/2 cups chocolate chips and sugar
7. Bake at 350 for 35-40 minutes
