Ingredients
- 3 cups white flour
- 1 cup coarse Irish wholemeal flour (or substitute whole wheat flour)
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 ounce butter
- 3/4 pint buttermilk

Step 1
Sift the salt and soda with the flour. Add the butter and mix together with your fingers until it crumbles. Add ¾ pint buttermilk (or substitute regular whole milk with 1 teaspoon lemon juice left overnight). Mix into a nice dough -- not too dry or not too moist. Don't handle it too much. Flatten into a round and bake in a large tin at 350 F in the center of the oven for 45 minutes exactly. Pop out onto a rack to cool.
