Ingredients

  • Crust
  • 35 reduced-fat vanilla wafer cookies
  • 2 Tablespoon confectioner's sugar
  • 2 Tablespoon sweetened flaked coconut
  • 2 Tablespoon light butter
  • Topping
  • 3 large egg whites
  • 2 large eggs
  • 1 1/2 cup granulated sugar
  • 3 Tablespoon all-purpose flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoon grated Key Lime zest
  • 1/2 cup fresh Key Lime juice
  • confectioners' sugar for dusting
  • lime zest for garnish

Preparation

Step 1

Crust:
Heat oven to 350 degrees. Line a 9X9 sq pan with non stick foil.

In a food processor pulse cookies, sugar & coconut until cookies are a fine crumb. Add butter and pulse until mixture is damp. Press mixture evenly and firmly into bottom of prepared pan. Bake 10 minutes until crust is set and pale golden.

Topping:
While crust bakes whisk egg whites, whole eggs, and sugar until combined. Add remaining ingredients and whisk until well blended. Pour egg mixture into hot crust and return to oven. Bake 30 minutes or until topping is pale golden and just set.

Let cool then lift bars out of pan using foil and transfer to cutting board. Cut into 16 squares and dust with confectioners' sugar and top with zest.
