Ingredients
- 4 medium ripe bananas
- 7 whole eggs
- 4-5 tablespoons coconut oil, melted {56-70g}
- 3 tablespoons raw honey {63g}
- 1-2 tablespoons vanilla
- 1 cup coconut flour {112g}
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 8 oz. fresh or frozen blueberries

Preparation
Step 1
Using a food processor, puree the bananas, add eggs and process, add honey, oil and vanilla and process, add coconut flour, baking soda and salt and process until smooth. Fold blueberries into batter.
Pour into a well oiled 9×13” baking dish lined with parchment paper.
Bake 45-50 minutes at 325°F. Check and bake another 10 minutes, covered if it is too browned on top.
