Ingredients
- 1 16oz log plain precooked polenta cut into 8 inch rounds
- 2 Tablespoons grated Pecorino Romano cheese
- 12 oz turkey sausage (about 4 links), casings removed
- 2 medium zucchini (8 oz), cut into 1 inch chunks
- 1 medium yellow pepper, cut into 1 inch chunks
- 1 cup marinara sauce

Preparation
Step 1
Preheat broiler. Line cookie sheet with foil and spray with nonstick cooking spray. Place polenta on prepared sheet, place in oven 5-6 inches from broiler. Broil polenta 10 mins or until golden brown (don't turn it over). Sprinkle polenta with with cheese & broil one min or until cheese melts.
Meanwhile, spray 12-inch nonstick skillet w nonstick spray. heat on medium until hot. Add sausage, cook 8 mins or until browned, breaking it up with a spoon as it cooks. Add zucchini and pepper, cook 3 mins or until veggies are tender crisp, stir often while cooking. Add marinara and 1/4 cup water. simmer covered 8 mins.
Place 2 polenta rounds on a plate, top with sausage sauce (repeat 3 more times).
