Preparation
Step 1
Grind meat using coarse grind plate. Then use the SMASH TECHNIQUE to fry the burgers. "It went like this: They placed a small golf ball sized hunk of ground meat on the grill and then let it cook for approximately a minute. Only then did they flip it and smash the living daylights out of it. The cooked side held the patty together. The smashing occurred on the uncooked side, leading to only marginal moisture loss. This was it." Sweet and Spicy Mustard 2 Oz. Yellow Mustard Seeds 1 Tsp. Kosher Salt 1 Tsp. Marjoram 1/8 Tsp. Red Pepper Flakes 2 Oz. Light Brown Sugar 1 Tsp. Turmeric 1/3 Cup Apple Cider Vinegar 1. Add seeds, salt, marjoram, and red pepper to a spice grinder or small food processor. Pulse until finely ground. 2. In food processor, combine ground seed mixture, with sugar and turmeric, plus a drop of the vinegar. While running, slowly drizzle vinegar until a coarse paste is achieved (use as needed). Let stand 15 minutes, then remove to sterilized jars and refrigerate for at least one day before use.
