Ingredients
- 1/4 cup butter
- 1 bunch leeks, white and light green parts only chopped
- 1 large onion, chopped
- 1/3 cup flour
- 3 cups vegetable broth
- 1 can (441 ml) ale
- 1/4 tsp salt
- 1/2 cup whipping cream
- 4 cups old cheddar cheese shredded
- 2 tsp hot mustard
- 1/2 tsp worcestershire sauce
- 1/4 tsp pepper

Step 1
1. Melt butter. Fry leeks and onions until softened, about 5 minutes
2. Add flour, cook, stirring until just starting to brown. About 2 minutes
3. Stir in broth, 2 cups water, ale, and salt. Bring to simmer, reduce heat to low, cover and simmer for 30 minutes.
4. Stir in cream, bring to a boil over medium heat. Stir in cheese, mustard, worchestershire sauce and pepper. Reduce heat to low and stir until cheese is melted.
