Ingredients

  • 2 heads garlic
  • 2 TBL olive oil
  • 2 tsp salt
  • 2 C whole milk
  • 2 C water
  • 2 C yellow cornmeal
  • 4 TBL butter
  • 4 lg eggs, separated

Preparation

Step 1

preheat oven to 350
cut off tops of garlic heads, leaving bulbs intact
place garlic on aluminum foil
drizzle w/ olive oil
fold foil over top to make package

bake until garlic is very soft 45 min to 1 hr
let cool for 15 min
squeeze garlic pods to remove cloves

in sm. bowl, combine garlic cloves & salt
mash w/ fork until paste is formed

increase oven temp to 400
spray 2-qt baking dish w/ non-stick cooking spray

in lg. saucepan, combine milk, 2 C water & garlic paste
bring to simmer over med heat
add cornmeal, stirring well
cook until thickened, 4-5 min
add butter, stirring well
let cool for 3-4 min
add egg yolks, stirring quickly to blend

in med bowl, beat egg whites @ high speed w/ electric mixer until stiff peaks form
fold egg whites into cornmeal mixture, making sure smooth
spoon into prepared dish

bake until puffed & golden brown, 30-35 min
serve immediately
