Mexican Chorizo Frittata

This frittata can be made with regular or vegetarian Chorizo. For this recipe, I used vegetarian Chorizo, and I topped it with a yogurt dip that had cilantro and chives in it (from Trader Joe's).

Ingredients

  • 2 Tbsp olive oil
  • 1/2 lb vegetarian Chorizo
  • 1 red bell pepper, diced
  • 2 handfuls of grape tomatoes, quartered
  • 1/2 red onion, chopped
  • 8 eggs
  • 3 Tbsp 2% milk
  • 1/4 tsp salt
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheddar cheese
  • Sour cream, cilantro, chives, etc. to top with

Step 1

1. Preheat oven to 350°F.

2. In a heavy, ovenproof 10-inch skillet, heat oil. Add sausage and cook for 2 minutes, breaking up meat as it cooks. Add bell pepper, tomatoes, and onion and cook until soft.

3. Meanwhile, in a medium bowl, beat eggs with milk, salt, paprika, and pepper. Pour into skillet. Cook on medium until nearly set on bottom (about 5 minutes). Sprinkle with cheese. Place in oven until frittata is set and cheese is melted, about 5-15 minutes. It is finished when the center no longer jiggles when you shake the skillet.

4. Remove. Serve topped with sour cream, cilantro, and chives.
