Ingredients
- 1 cup cottage cheese
- 1/3 cup all-purpose flour
- 2 Tbsp canola oil
- 3 eggs, lightly beaten
- 2 Tbsp sugar
- 1/8 tsp salt
- Cooking spray
- Maple syrup, butter
- sliced fresh strawberries, for toppings

Step 1
1. In a blender, combine cottage cheese, flour, oil, eggs, sugar, and salt. Blend until smooth. Thin slightly with water, if necessary.
2. Preheat a griddle pan on medium. Coat with cooking spray. Pour batter, using ⅓ cup per pancake, onto pan. (Makes about 8 pancakes.) Cook until bubbles appear. Flip and cook until golden. Serve with toppings.
