A traditional Italian dish made from scratch, no store bought shells here! This recipe freezes well so double it up and stock the freezer.

Ingredients
- 1 cup flour
- 2 lbs Ricotta
- 1/2 lb Mozzarella (sliced)
- 1 cup water
- 7 eggs
- 1/2 plus 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup grated Parmesan cheese
- Tomato/Spaghetti sauce (I prefer homemade)

Preparation
Step 1
Manicotti Batter:
Combine flour, water, 1/4 teaspoon salt until smooth. Beat in 4 eggs. Heat a 6 inch skillet. Grease skillet and swirl 3 tablespoons of batter in pan. (you are basically making crepes here). Cook on both sides (do not brown). Stacked cooked crepes and set aside to cool.
Filling:
Mix 1/2 teaspoon salt, 3 eggs, ricotta, and grated cheese.
Prepare 13 X 9 dish by spreading a thin layer of sauce on the bottom.
Assembly:
Lay on crepe on board or dish. Top with 2 tablespoons of filling and 1 slice of Mozzarella cheese. Roll up crepe and place in prepared dish seam side down. Continue until complete. Cover tops of crepes with more sauce and sprinkle with cheese.
At this stage cover with wax paper & tin foil and freeze or bake at 350 degrees for 30 minutes or until cheese bubbles.
Allow to cool 5 mins then serve with extra sauce, meatballs, salad, and garlic bread.
