  • 2 1/2 pounds sweet potatoes (about 3 small to medium red-skinned yams), scrubbed, cut into 3/4-inch wedges

DIRECTIONS

Preheat oven to 450 degrees F.

Combine the oil and chipotle powder in a small bowl. Spread the potatoes on a baking sheet and drizzle the seasoned oil over the wedges. Toss to coat. Season with salt and pepper.




Roast, turning the potatoes once, until potatoes are browned and tender, about 20 to 25 minutes.
