WHITE CHRISTMAS CHILI

Ingredients
- 8 boneless chicken breasts
- 2 medium onions, chopped
- 2 garlic cloves, minced
- 1 TBS oil
- 2 (14.5oz.) cans chicken broth
- 4 (15oz.) cans cannellini beans
- 2 (4.5oz.) cans chopped green chilies, drained
- 1 tsp. salt
- 3/4 tsp. oregano
- 1 tsp. ground cumin
- 1/2 tsp. chili powder
- 1/2 tsp. black pepper
- 1/8 tsp. red pepper

Preparation
Step 1
Cut chicken in bite-size pieces. Sauté chicken, onion and garlic in hot oil over high heat for about 10 minutes until done. Stir in broth and remainder of ingredients. Bring to a boil. Reduce heat and simmer, uncovered for about 30 minutes.
NOTE: Sometimes I just cook the chicken and then put all ingredients in the crock pot and simmer most of the day.
