Ingredients

  • Lemon syrup:
  • 14 Tb softened butter
  • 1 cup sugar
  • 4 lg eggs
  • 1 cup + 2 Tb gluten free flour mix (& approp baking powder/ soda)
  • 1/2 cup cornmeal
  • Peel & juice of 1 lemon
  • 1/2 cup conf. Sugar
  • Zest & juice of 3 lemons
  • Candied lemon:
  • 1 1/4 cup sugar
  • 2 thinly sliced lemons
  • 1 cup water

Preparation

Step 1

Cake:
Mix cake ingredients in mixing bowl & mix bake at 350 degrees for 25-30 min.
Lemon syrup:
Whisk together ingredients
Candied lemon:
Put sugar & water in saucepan. Heat to dissolve sugar, stirring. Add lemon slices in single layer. Simmer uncovered for 45 min., stir occasionally.
Take cake from oven & poke holes w/ fork. Soon syrup over cake. Cool cake completely & top w/ candied lemon slices w/o the liquid w/ candied lemon slices
