Ingredients
- 1 lb kohlrabi, peeled (about 3)
- 1 carrot, peeled
- 1/4 cup chopped fresh parsley
- 2 Tbsp minced scallions
- 2 Tbsp mayonnaise
- 2 Tbsp distilled white vinegar
- 1 Tbsp Dijon mustard
- 1 Tbsp honey
- 1/2 tsp celery seeds
- 1/2 tsp kosher salt
- 1/8 tsp cayenne pepper

Step 1
For the slaw, shred kohlrabi and carrot using a food processor or box grater. Combine shredded vegetables in a bowl with parsley and scallions.
For the dressing, whisk together mayonnaise, vinegar, Dijon, honey, celery seeds, salt and cayenne. Pour dressing over slaw ingredients and toss to combine. Chill slaw until ready to serve. Slaw can be made up to 1 day ahead.
