Ingredients

  • 1 lb chicken
  • 1 tbsp cornstarch
  • 1 tbsp soya sauce
  • 1 tbsp oil, divided
  • 2 cloves garlic minced
  • 2 tsp minced gingerroot
  • 2 green peppers chopped
  • 1/4 cup catalina
  • 1/2 cup cashews, salted

Preparation

Step 1

1. Combine chicken, cornstarch and soya sauce. Refridgerate for 15 mins
2. Heat oil and add garlic and ginger and stir fry for 1 minute.
3. Add chicken and stir fry for 4-5 minuted or until lightly browned. Remove from wok.
4. Add remaining oil and peppers and stir fry on medium heat for 2 minutes. Add chicken and stir fry for 2 minutes or until done.
5. Stir in dressing and spoon onto platter. Top with nuts.
