Ingredients
- No-Stick Cooking Spray
- 1 package Pillsbury® Funfetti® Vibrant Green Cupcake & Cake Mix
- 2 tablespoons Vegetable Oil
- 1 large egg
- 1/8 to 1/4 teaspoons mint extract (optional)
- 1/2 cup Vanilla Flavored Frosting
- Thin chocolate-mint candies

Preparation
Step 1
HEAT oven to 375°F. Coat baking sheet with no-stick cooking spray. Blend cake mix, oil, egg and mint extract, if desired, in medium bowl with electric mixer on medium speed until evenly moistened. Shape dough into 18 (1-inch) balls. Place 2 inches apart on prepared baking sheet.
BAKE 7 to 9 minutes or until edges are set. Cool 1 minute. Remove to wire rack to cool completely.
PLACE frosting in small heavy-duty plastic bag. Cut small corner off bag. Pipe frosting onto center of each cookie. Cut mint candies into triangular pieces. Insert one piece of candy into frosting on each cookie.
