Ingredients

  • 3 cups Bisquick
  • 1/2 cup orange juice
  • 3/4 cup all-purpose flour
  • 1 T. grated orange peel
  • 2/3 cup granulated sugar
  • 2 cups white chocolate chips
  • 2 eggs, slightly beaten
  • 1/2 cup chopped macadamia nuts or walnuts
  • 1/2 cup plain yogurt

Step 1

Preheat oven to 375 degrees.
Grease or paper line 18 muffin cups. Combine baking mix, flour and sugar in a large bowl. Add eggs, yogurt, juice and orange peel; blend well. Stir in 1 1/3 cups white chocolate chips. Spoon into prepared muffin cups filling 3/4 full. Sprinkle with nuts. Bake 18 to 22 minutes or until toothpick inserted in center comes out clean. Cool in pans for 10 minutes; remove to wire racks to cool further.

Microwave remaining chips in a small, heavy-duty plastic bag on medium-high for 1 minute; knead. Microwave at 10 to 20 second intervals, kneading until smooth. Snip corner of bag; squeeze to drizzle over muffins. Serve warm.
