Four Cheese Sauce

Ingredients
- 2 cups heavy whipping cream
- 1/2 cup butter
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded provolone cheese
- 1/2 cup grated Romano cheese
- OR-
- Large Pasta
- 4 Tablespoons Butter
- 4 Tablespoons Flour
- Veg or Chx Stock
- 1/2 cup sour cream
- 1/2 cup Gorganzo;a
- 1/2 cup Fontina or Mozzarella
- 1/2 cup Parmesean
- Pine Nuta
- Pasta Water
- Salt
- Chives
- Pepper

Preparation
Step 1
In a medium saucepan combine whipping cream and butter.
Bring to a simmer over medium heat, stirring frequently until butter melts.
Gradually stir in grated Parmesan cheese, grated mozzarella cheese, grated provolone cheese, and grated Romano cheese.
Reduce heat to low, and continue to stir just until all cheese is melted.
Serve immediately, sauce will thicken upon standing.

Start pasta to the boil
Melt butter and add the flour to make the rue.
Add Stock and stir until smooth.
Add 1st 3 cheeses, one at a time and stir until smooth.
Season with Salt and Pepper and add Pine Nuts.
Add Drained Pasta directly to Sauce and 1-2 Tablespoons of the
Pasta water.
Stir until blended and garnish with Parmesan and Chives.
Serve immediately.
