Ingredients

  • 2 1/2 cups AP flour
  • 3/4 cup sugar
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 2 pkg 3 oz cream cheese soft & divided
  • 3/4 cup milk
  • 2 Tb oil
  • 2 eggs divided
  • 1 tsp vanilla
  • 1/2 c sweetened coconut shreds
  • 3/4 cup cherry preserves
  • 2 Tb butter

Step 1

Combine flour & sugar in bowl. Remove 1/2 cup of the mix & set aside. To remaining add baking sod & powder. Cut in 1 pkg cream cheese until looks like coarse meal. Combine milk, oil & 1 egg in med bowl add to cream cheese mix & stir until moistened. Spread on bottom & up sides of a springform pan. Combine remaining cream cheese, egg & vanilla in sm bowl, stir until smooth. Pour over batter sprinkle w/ coconut, spoon preserves over. Cut cold butter into flour/sugar mix until crumbly. Sprinkle over top. Bake at 350 degrees for 55-60 min. Cool 15 min. Serve warm.
