Chocolate cupcakes

Easy & so rich. These cupcakes satisfy that chocolate craving! For portion control I make minis! Just adjust the baking time. I don't even frost (of course you can : ). )! I dust w/ powdered sugar.

Ingredients
- 3/4 cup flour ( you can use AP, I blend pastry flour & AP for a lighter cupcake)
- 1/2 cup cocoa powder (I use dark)
- 1 tsp baking powder
- 1/2 tsp salt (I use kosher or sea salt)
- 1/2 cup (1 stick) softened unsealed butter,
- 2 eggs
- 1 cup +2 Tb sugar
- 1 tsp vanilla
- 1/2 cup milk

Preparation
Step 1
Combine flour, cocoa, baking powder & salt in sm bowl. In lg bowl beat sugar & butter. Add eggs 1 at a time beating after each. Add vanilla beat well. Add flour alternating w/ milk end w/ flour. Beat only until just combined. Pour batter into cupcake tin & bake regular sized cupcakes at 350 degrees for 20 min. Excellent topped w/ ganache, just dip each cupcake &'twirl. Or frost Orr dust w/ confectioners sugar.
