Ingredients

  • 1/2 cup Sliced mushroom
  • 1/4 cup Sliced raw onion
  • 1 TBS Chopped raw pepper
  • 1/2 TBS Lemon juice
  • 1 TSP Extra-virgin olive oil
  • 1/2 TSP Dried dill weed
  • 6 oz Raw Swordfish (I used talapia)
  • 1/4 TSP Dried bay leaves
  • 4 med slices Red Tomato medium sliced
  • optional - sliced thin zuchini

Preparation

Step 1

Preheat oven to 450F
Combine mushrooms, onion, pepper, lemon juice, olive oil and dill.
Spread half of mushroom mixture on the bottom of a baking pan and then add swordfish.
Place the bay leaf and tomato slices on top of the fish and zuchini and sprinkle the remaining mushroom mixture over.
Cover with foil and bake for 20 minutes or until fish flakes easily with a fork.
Serve with a side salad (2 cups lettuce, 1/2 cup cucumber, 2 slices tomato and 1 tbs balsamic vinegar).
Enjoy with fruit for dessert.
