Preparation
Step 1
This Crockpot Southwest Chicken & Quinoa bowl is one of my all time favorite and easiest recipes to cook. I make it so often because it’s just so quick and easy. On work days I throw everything in, turn on the crockpot and run out the door. When you return home your kitchen is filled with a delicious aroma and your dinner is just about ready -give or take 10 minutes of prep. Take off the lid, pour everything over quinoa and you’re finished! Plus, it’s uber healthy and who doesn’t like that?!
Directions:
Place Crockpot on low
Add in chicken, salsa, beans, cilantro and garlic. Make sure chicken is fully covered.
Shred the chicken and place back in Crockpot, stir ingredients.
Cook quinoa using the directions on the box.
Place a cup of quinoa in a bowl, top with desired amount of ingredients from the Crockpot.
Cut avocado and place on top.
