Ingredients

  • Cream Cheese Whipped Cream:
  • 2 C. Chocolate cookie crumbs
  • 4 Tbs butter melted
  • 5 8oz. pkg cream cheese
  • 1 1/2 C. sugar
  • 1/4 C. cornstarch
  • 5 Tbs. cocoa powder
  • 7 eggs
  • 1 1/2 C. sour cream
  • 1/3 C. buttermilk
  • 3 tsp vinegar
  • 2 tsp vanilla
  • 2 oz. red food coloring
  • 3/4 C. heavy whipping cream
  • 1/4 C. powdered sugar
  • 1/2 C. cream cheese whipped icing

Preparation

Step 1

Mix cookie crumbs and melted butter, press into bottom of 10" springform pan. Bake 350* for 10 minutes.
Mix cream cheese, cornstarch, sugar and cocoa powder until smooth, scraping often. Add eggs one at a time on low. Add sour cream, buttermilk, vinegar, vanilla and food coloring blending on low just until combined.

Bake 350* for 15 minutes, lower temperature to 200* and bake an additional 1 hour and 15 minutes. Cool in oven for additional 1 hour until set.
Topping: In cold bowl whip heavy cream until soft peaks form, add powdered sugar, whip until stiff peaks form. Fold in cream cheese icing.
