- 2 cups chocolate ice cream
- 1 cup (6 ounces) semisweet chocolate chips
- 2 cups self-rising flour
- 2 teaspoons vanilla extract

Preparation
Step 1
Preheat the oven to 400 degree F. In a large bowl, stir the ice cream until very soft, but not melted. Stir in the remaining ingredients until well blended; the mixture will be stiff. Place 12 paper baking cups into a muffin tin and fill each cup about two-thirds full with batter. Bake for 18 to 20 minutes, until set.
Makes 1 dozen.
Notes:
You can really experiment with these by using different ice cream flavors, even ones like chocolate chip that already have chocolate or candy bits in them.
