Ingredients
- MAC SALAD W/ SHARP CHEDDAR & CHIPOTLE:
- S & P
- 1 lb elbow macaroni
- 1/4 C minced red onion
- 1 celery rib, minced
- 1/4 C chopped fresh parsley
- 2 TBL lemon juice
- 1 TBL dijon mustard
- 1/8 tsp garlic powder
- 1/8 tsp cayenne pepper
- 1 2/ C mayo
- 1 1/2 C shredded extra sharp cheddar cheese
- 2 TBL minced canned chipotle chiles in adobo w/ onion

Preparation
Step 1
cook pasta:
bring 4 qts water to boil in lg. pot
add 1 TBL salt & pasta
cook until al dente, 6-8 min
drain in colander
rinse w/ cold water until cool
drain again briefly
transfer to lg bowl
make dressing:
stir into pasta rest of ingredient (less mayo)
let sit until flavors are absorbed, abt 2 min
add mayo
let sit until salad is no longer watery, 5-10 min
season w/ S & P
serve
SALAD CAN BE REFRIG, COVERED, FOR 2 DAYS
