Ingredients
- 2 crust unbaked 9 0r 10 inch pie crust
- 1 3/4 - C sugar
- 1/2 C flour
- 1/2 tsp grated orange rind (or 1/4 tsp extract or 1/4 tsp almond extract)
- 5 C cut-up rhubarb (1/2 in. pieces)

Preparation
Step 1
1. Stir together sugar, flour, orange peel
2. Place 1/2 of rhubarb in pastry lined plate; sprinkle with 1/2 of sugar mixture; place rest of rhubarb and rest of sugar in plate. If using extract , drip it onto rhubarb mixture
3. Cover with top crust and cut several slits in top; sprinkle with sugar
3. Cover edge of crust with pie shield or foil to prevent excess browning - remove during last 15 min, of baking
4. Bake at 375° 40 - 50 min. until crust is brown and mixture begins to bubble thru slits.
