Sesame Lime Soba Noodles with Shiitake Mushrooms & Snow Peaas 0 Picture

Ingredients

  • SAUCE:
  • 1 pkg (8oz - 225g) soba noodles
  • 2 tsp olive oil
  • 5-6 oz shiitake mushrooms (about 2 1/2-3 cups) stems removed, and cut in halves or thirds
  • 4-5 oz snow peas, ends trimmed and cut lengthwise in thirds
  • 1 tsp tamari
  • 1 cup green onions, chopped
  • 2 tbsp black seseme seeds
  • 1/4 - 1/2 cup fresh cilantro leaves, chopped
  • lime wedges (for garnish)
  • toasted seseme oil (for finishing)
  • 1 tbsp hoisin sauce
  • 3 1/2 tbsp tamari
  • 1 1/2 tbsp fresh ginger, chopped
  • 2 large cloves garlic
  • 3 tbsp freshly squeezed lime juice
  • 2 tbsp apple cider vinegar
  • 2 1/2 tbsp toasted seseme oil
  • 3 tbsp agave nectar

Step 1

With a hand blender or in a belnder, combine all sauce ingredients (or, finely mince or grate garlic and ginger, them whisk all ingredients by hand in a bowl). Cook noodles according to package directions. Meanwhile, in a deep frying pan or large pot on high, heat oil. Add mushrooms and saute for 1-2 minutes to slightly sear, then add snow peas and tamari and cook for 2-3 minutes, tossing to slighly sear vegetables, then remove from heat and toss in green onions. Drain pasta (do not rinse!) and add to mushrooms and snow peas, along with prepared sauce. Toss to warm sauce and distribute through the noodles. Add sesame seeds and cilantro, toss again, and serve. Serve each portion with a lime wedge and drizzle of toasted sesame oil if desired.
