Sweet Potato and Apple Bake

Ingredients

  • 3 golden delicious apples, peeled, halved and cored
  • 1 T lemon juice
  • 1 to 1/2 lbs sweet potatoes, peeled, halved lengthwise and sliced very thin (about 4 cups)
  • 1/4 C apple juice or cider
  • 2 T margarine, melted

Preparation

Step 1

Preheat oven to 350. Slice apples as thin as possible. Toss w/ Lemon juice in large bowl. Reserve nicest slices of apples and sweet potatoes for the top. Layer remaining apple and sweet potatoes in a 1 1/2 quart casserole or baking dish. Arrange reserved slices on top. Pour juice over; drizzel w/ melted margarine. Cover and bake for 45 mins. Uncover and bake 15 mins more.
