Ingredients

  • 1 bunch Swiss chard or escarole
  • 1 T EVOO
  • 1 C chopped onion
  • 1 T minced garlic
  • 2 sliced carrots
  • 28 oz chicken stock
  • 1 14oz can tomatoes
  • 1/2 t rosemary
  • 1/4 t ground pepper
  • 1 160z. can cannelloni beans
  • 1/4 C elbow macaroni
  • 1/4 C chopped parsley
  • Grated Parmesan cheese

Preparation

Step 1

Slice chard 1/4" thick. Slice leafy tops 1" thick. Set aside
Heat oil over med. heat. Add onions & sauté` 5 min. Add garlic & cook 30 sec. Add chard, chicken stock, tomatoes, carrots, rosemary & pepper. Bring to boil;' reduce heat & simmer 10 min. Stir in beans, macaroni, parsley & chard tops. Return to boil; reduce heat & simmer 10 min. Serve with Parmesan
