Jim's Salad Brunoise

I use my Nicer-Dicer to create the brunoise cubes. However, they can be created by cutting julienne strips, turning them and cutting them into brunoise squares.
The ingredients can be increased for larger amounts of salad.

Ingredients
- 4 apples - an assortment, cored but not peeled
- 4 pears - an assortment, cored but not peeled
- 1 medium red onion, peeled
- 1 English cucumber, ends cut off but not peeled
- 2 cups chopped arugula
- creamy blue cheese dressing
- salt and pepper to taste

Preparation
Step 1
Cut the apples, pears, onion, and cucumber into brunoise-sized cubes. Mix the apple and pear cubes with the blue cheese dressing as you chop, to prevent discoloration. Mix-in chopped arugula, add salt and pepper to taste.
Chill and serve.
Note: if the salad is not to be served shortly after preparation, lay the chopped arugula on top, mixing it in at the last minute.
