Ingredients

  • 1/2 pound chicken livers and gizzards
  • 1/4 pound ground beef or pork
  • 12 fresh green onions, chopped (including about 2 inches of green stalk)
  • 1 cup celery, chopped (including leaves)
  • 1/2 green bell pepper, chopped fine
  • 1/2 red bell pepper, chopped fine
  • 1/2 yellow pepper, chopped fine
  • 4 tablespoons olive oil
  • 1/4 cup parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon garlic powder
  • 1/2 teaspoon crushed red pepper flakes
  • 4 cups cooked rice

Step 1

Use a meat grinder to grind the chicken meat. Add the ground beef and the vegetables. Mix the meat and vegetables together. Sending the entire mix back through the grinder is a good way to blend everything.
Heat the oil, and then add the meat and vegetable mixture to the skillet. Add the parsley, chives, garlic powder and pepper flakes to the meat mixture while it's cooking. While the mixture is frying, make the rice. Drain the rice, and add it to the meat and vegetables. Blend thoroughly, and serve hot.
Meatless Dirty Rice
Cajun dirty rice can be made without meat, but both the texture and the taste will be compromised. Because the flavor of the meat adds so much to the meal, boil the rice in chicken and beef stock-or even vegetable stock-so that you pick up some of the flavor. And, of course, you can always add a few more vegetables to the mix to make up for the texture.
Dirty rice can also be made very spicy by just adding a tablespoon or two of Cajun spices. Mix up a batch of Cajun herbs by adding equal amounts of the following ingredients: paprika, garlic powder, onion powder, parsley, basil, bay leaves, white pepper, cayenne pepper, red crushed pepper flakes and (optional) crushed jalapeno flakes. The jalapeno flakes offer a different type of heat, and complement the rice in a slightly different manner.
Remember, no matter what type of spice you're using, a little often goes a long way. Don't ever add more than one tablespoon of this hot spice mixture to a rice dish without tasting in between. If you find you've added too much spice, boil up another cup or two of rice, and add it to the dish before serving.
