Theresa (Harrison) is my (Cheryl Costigan's) friend who lives in Red Deer, Alberta. I met her and her (since deceased) husband Earl Harrison in Dawson City, Yukon Territory while I was enroute from Anchorage, Alaska to Southeast Alaska with Russ Galdes, Jan Costigan and Linda Wataoka. I believe we were taking my Mom (Jan Costigan) to the ferry terminal. Anyway, this is Terry's zucchini bread recipe.

Ingredients

  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups sugar, may use part brown sugar
  • 2 cups zucchini, peeled and grated
  • 1 1/2 tsp vanilla
  • 3 cups flour
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3/4 cup raisins, coconut or dates, optional
  • Grated orange or lemon rind to taste, optional

Preparation

Step 1

In large bowl beat eggs until light and fluffy. Add oil, sugar, zucchini and vanilla; mix well. Sift flour, cinnamon, nutmeg and cloves, salt, baking soda and baking powder; add to zucchini mixture and beat until thoroughly blended. Stir in optional additions. Place in 3 greased and floured loaf pans. Bake at 325 F oven for 1 hour and 10 minutes. Turn out and place on wire racks until completely cool.
