Ingredients
- 2 cups flour
- 4 tea. baking powder
- 1 1/4 tea. salt
- 1 egg, beaten
- 1 cup milk
- 4 Tbsp. vegetable oil
- 3 Tbsp. brown sugar
- 1 cup mashed sweet potatoes, or canned yams in syrup
- 1-2 chipolte peppers in adobo sauce, stem removed

Step 1
Preheat oven to 350 degrees.
In a large bowl, stir together flour, baking powder and salt. In a blender, add together eggs, milk, oil, brown sugar, sweet potatoes and chipotles. Blend until smooth.
Stir liquids into dry ingredients, stirring by hand until it is just moistened. Pour the batter into a well-buttered loaf pan (11x4 or 9x5), and bake on the middle rack for 35-45 minutes or until a tester comes out clean.
Let the bread cool in the pan on a rack for 30 minutes. Turn loaf out onto the rack and cool completely.
