Ingredients

  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 2 1/4 tsp olive oil
  • 1 1/2 cups sliced zucchini
  • 2 tsp dried basil, crushed
  • 1 baked pastry crust
  • 3/4 cup chopped cooked spinach, well drained
  • 1/2 tsp nutmeg
  • 2/3 cup milk
  • 2 eggs, slightly beaten
  • 2 egg whites, beaten
  • 1 cup shredded mozzarella cheese
  • 1 tbsp grated Parmesan cheese
  • Tomato slices, optional

Step 1

In skillet cook onion and garlic in hot oil until onion is tender but not brown. Add zucchini; sprinkle with basil. Cook and stir for 3 to 4 minutes. Cover and simmer 3 minutes or till zucchini is tender. Pour mixture into the baked pastry shell. Top with spinach; sprinkle with nutmeg. Heat milk till simmering; gradually beat into eggs and egg whites. Strain over spinach. Top with cheeses. Bake in 375 F oven for 30 to 35 minutes. Top with tomato slices and a little Parmesan cheese; bake for 5 to 10 minutes longer.
