Ingredients
- 2 small zucchini
- 2 tbsp cooking oil
- 2 eggs
- Salt, to taste
- Pepper, to taste
- 1/2 tsp oregano
- 1/2 cup cheese, Parmesan or Romano, grated

Step 1
Cut zucchini into 1/8-inch slices. Saute in hot oil in a large cast-iron frying pan, stirring constantly, until golden brown. Reduce heat to medium-low. Beat eggs with a wire whisk until well blended but not frothy and add to zucchini in pan. Sprinkle with remaining ingredients. Cook, covered, until egg is set. Fold the omelet in half, allow to cook a few seconds longer, then remove to warmed plate and cut into wedges.
