This was my (now deceased) friend Earl Harrison's recipe. I met he and his wife (Terry Harrison) in Dawson City, Yukon Territory.

Ingredients

  • 1 cup scallions, slivered
  • 2 medium zucchini, sliced
  • 2 tbsp butter
  • 1 medium tomato, chopped
  • 1 clove garlic, crushed
  • 1/4 tsp dill weed
  • Salt, to taste
  • Pepper, to taste
  • 4 eggs

Preparation

Step 1

Saute onions and zucchini in butter until zucchini slices are lightly browned on both sides. Add tomato and garlic and cook until most of the juice has cooked away. Add dill, salt and pepper. Beat eggs and pour over vegetables. Cook only until eggs are set.
