Had a similar meal in Dunsmuir Ca,circa 1981, went home and created this recipe, a family favorite still in 2012

Ingredients

  • 6 Chicken thighs (skinless)or
  • 1 whole cut-up chicken
  • 1 15oz jar of artichoke hearts **
  • 8 mushrooms sliced
  • 1 bell pepper cut to strips
  • 1 onion quartered
  • 3/4 cup white wine, 1/4 cup for the chef!
  • oil / vinegar from chokes,
  • herbs: basil, oregano, rosemary, thyme*
  • 2 clove garlic diced
  • S & P
  • Cooked Egg noodles or cooked rice
  • 2 T cornstarch

Preparation

Step 1

BROWN- Chicken w/ onion,garlic in oil from chokes.
ADD- wine, *herbs, mushrooms and bell pepper
COOK- 1 hr on stove in dutch oven.
AFTER- 30 min. add artichokes excluding rest of oil.
Remove Chicken and veges and place on top of noodles/or rice
Mix 2T Corstarch w/1/4C water and
stir into sauce to thicken and pour over chicken and noodles/rice.

Serve w/ Salad, wine and bread!

*Make a Bouquet Garni , Tie herbs with string and lay on top…..

** A requirement in this recipe is the vinegar from the artichokes. if you use chokes from the can in water, add a little( 5T ) of pickling juice from pepperincini's, or other pickled items**
