Ingredients

  • 3 large eggs
  • 1/3 cup milk
  • 1/4 teaspoon salt
  • 8 sandwich-size slices brioche, egg bread, challah, or white bread
  • 2 tablespoons yellow mustard
  • 4 (1-ounce) slices cooked turkey
  • 8 ounces Emmentaler or Swiss cheese, cut into 16 thin slices
  • 4 (1-ounce) slices ham
  • 2 tablespoons butter
  • Confectioners’ sugar, for dusting
  • 1/4 cup strawberry jam (or use cherry, apricot, or any other jam

Preparation

Step 1

In a shallow bowl large enough for the sandwiches to fit, whisk together the eggs, milk, and salt.



To assemble: Place all 8 bread slices on your work surface.Spread the mustard on each piece of bread. Layer the turkey on 4 slices of bread, followed by the cheese and then the ham. Top with the remaining bread slices.



For stovetop method: Heat the butter in a large nonstick skillet over medium heat. Dip each sandwich into the egg mixture, turning to coat both sides. Transfer the sandwiches to the pan. Cover and cook for 3 to 4 minutes, until the undersides begin to brown. Turn the sandwiches and press lightly with a spatula to compress the filling slightly. Cover and cook for about 3 minutes, or until the bread is golden brown. (Watch carefully, because the delicate bread can burn easily.) Turn once more and cook for 1 to 2 minutes, until the cheese has melted completely. Let stand for 5 minutes. Sprinkle with confectioners’ sugar. Cut diagonally in half and serve with a dollop of jam alongside.
