- 1 1/2 cups butter, softened
- 1 (16 oz.) block Monterrey Jack cheese with peppers, chredded
- 4 cups all purpose flour
- 1 t. salt

Preparation
Step 1
1. In a large bowl, beat butter and cheese at medium speed with a mixer until combined.
2. In a medium bowl, combine flour and salt. Gradually add to butter mixture, beating until combined. Shape dough into 3 (8 inch) logs. Wrap in plastic wrap, and refrigerate up to 2 weeks.
3. Preheat oven to 350. Line baking sheets with parchment paper.
4. Cut logs into 1/8 inch thick slices. Place on prepared baking sheets, and bake for 8 to 10 minutes or until edges of cheese wafers are lightly browned. Cool on pans for 2 minutes. Remove from pans, and cool completely on wire racks. Store cheese wafers in airtight containers up to 3 days.
