French Toast, Nut Covered Vanilla

- 4 eggs
- 2 cups milk
- 1 tbls sugar
- 1 tsp vanilla
- 1/8 tsp ground nutmeg
- 1/4 tsp salt
- 8 slices bread
- 2 cups ground nuts
- 3 tbls butter
- 1/4 cup Powdered sugar

Step 1
Preheat oven to 350 degrees. Butter one or two baking dishes large enough to hold the bread in one layer. Whisk together the eggs, milk, sugar, vanilla, nutmeg and salt. Heat a nonstick skillet over med-high heat. Dip the bread into the egg mixture and then roll it in the ground nut mixture, coating both sides. Add the butter to the hot pan and swirl the pan. When the buter foams, carefully transfer as many slices as will fit without crowding. Brown on each side, about 2 min per side and transfer to the baking dish. Bake for 15 min.
To serve, cut each slice diagonally in half and arrange the triangles on heated serving plates. Dust with powdered sugar. Serve hot with jam, syrup or fresh berries.
