Ingredients
- 1 (9 inch) unbaked pie crust
- 3 eggs, beaten
- 3/4 cup sugar
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1 egg white
- 2-1/2 cups scalded milk
- 1/4 tsp ground nutmeg
- 3 drops yellow food coloring(optional)

Preparation
Step 1
Put eggs, sugar, salt, and vanilla in mixing bowl and mix well. Very slowly stir in scalded milk. Add foodcoloring(optional), Brush inside of pastry shell with egg white. Pour in custard and sprinkle with nutmeg. Bake in preheated 400° oven for 30 to 35 minutes or until a knife inserted comes out clean.
